Hi my name is Mark Principato and I am the Owner and Pitmaster of Rubbed Right BBQ. I first became interested in cooking as a child but it wasn't until my early twenty's that I started to develop a serious interest in the art of smoked and grilled foods after being designated the official family barbecuer. From that moment on I spent a lot of time in the backyard practicing recipes and techniques in attempt to wow my family and friends. One night while channel surfing a show titled Barbecue Championship Series caught my eye and from that moment on I just had to experience competitive barbecue for myself. I soon entered my first professional barbecue competition and the experience was so much fun that I was immediately hooked even after hardly any shuteye in about a 36 hour time frame but I kept at it and eventually I developed the flavors and techniques needed to produce award winning barbecue. As time went on I realized that I would like to share my passion with the community and I went on to develop Rubbed Right BBQ, staying as true to competition style barbecue as possible. With the support of my amazing wife, family, and friends you can taste the love and passion that goes into our food. Through a flavor layering process I am able to create a finished product that is moist, tender, and pops with flavor. The key to this process is for all the ingredients from the injections, marinades, rubs, sauces, and most importantly the smoke to meld together in perfect harmony without one overpowering the other. Barbecue truly is an amazing art but I really do believe that the best quality about it is that it has a way of bringing people together and that is most important of all.
